NTFS is much better than FAT. Better metadata support, better data structuring for better speed, reliability and disk space user, and it adds access control lists and file system journaling. Plus support for large files and hard disks, of course.
There should be libraries available for Mac that allow it to read NTFS. Ah yes, thought so, NTFS-3G is Mac compatible.

I heard UAC is still present but screwed up such that there's no point keeping it on because it doesn't actually help, it's just annoying.
Sudo's a better system anyway..

Where did you hear that? They have changed it from Vista so there are more level;s for the user to select and can turn it off if they want too, but it is deffintely worth having.

The UAC will not be going anywhere but can be configured to be a lot less annoying.

Re: Sudo: Stands for "super user do". Under Linux, rather than run as a root account, you run as a limited account and should you wish to do anything that requires root access, you can call that command with sudo and provide your root password. Distros like Ubuntu simplify the process by not requiring two different accounts - you log into the root account but it doesn't actually get root access without sudo. Programs (like package managers, system updaters, etc) can also request root access, and again you have to provide your password.
