Cassowaries aren't big enough to ride - two metres high and 60kg is about the limit. Big ostriches can hit 2.8 metres and 155kg. Ostriches are also faster, reaching a staggering 75km/h.

But they're not vicious enough. And you can make cassowaries bigger, genetically. And their plumage is much cooler, and their faces are intimidating.

Clearly you have never encountered a real ostrich. Cassowaries are extremely shy and only attack if seriously provoked. Ostriches are just plain vicious bastards.

When faced with danger, ostriches eat sand-wiches and generally run away, thus leading to the adaptation of their speedy legs.

When faced with danger, the cassowaries strike faster than a krait (Bartimaeus reference), and leave their victim bleeding, maimed, and basically dead.
