As Fuzzy said, sometimes the provinces beyond Quebec are referred to as Eastern provinces. But more often we just call them Maritime provinces. The reason that they are called eastern, and Quebec and Ontario are usually not is because most of the attention, domestically and internationally, is on Quebec and Ontario. Thus, "central" Canada, politically, if not geographically.
Which is also the reason why these two provinces are poked at. A lot of people in the West resent Quebec and Ontario. More political power, most of the economy and urban culture, population, etc. Not to mention a lot of events that seemed to isolate the West from the East (see the Salmon Salute, some of the agreements made within provinces with the federal government).
The only thing people make fun of in the Maritime provinces is Newfoundland. Cause they have a weird accent and from what I've heard is becoming more impoverished.
