Kino's Journey - Philosophical Road Journey with girl and sentient motorcycle.

Cowboy Bebop - Will make a blues fan out of you.

Last Exile - Science Fantasy at its best.

Afro Samurai - Well, not that good, but its violent and has Samuel L Jackson.

I'll second the Afro Samurai one, the others I don't know.

I'd also say Appleseed (2004 version, anyway, the sequel isn't nearly as good and I haven't seen the '88 one) should be thrown in as well, that's another of my faves.
